Mango Cheesecakes with Macadamia Shortbread Crust

Ingredients

CHEESECAKES

  1. 3large ripe mangoes
  2. 1/3 cup plus 1 teaspoon sugar, plus more for dusting
  3. 12ounces cream cheese, softened
  4. 2eggs, at room temperature
  5. 1tablespoon fresh lemon juice
  6. 1/2 teaspoon pure vanilla extract

SHORTBREAD

  1. 1/2 cup unsalted macadamia nuts, toasted and finely chopped
  2. 1/2 cup all-purpose flour
  3. 2 tablespoons rice flour
  4. 2 tablespoons granulated sugar
  5. 2 tablespoons dark brown sugar
  6. 1/4 teaspoon salt
  7. 4 tablespoons cold unsalted butter, cut into small pieces
  8. 1 tablespoon cold milk
  9. 1/4 teaspoon pure vanilla extract
  10. Coconut-Tapioca Sauce, for serving
