Lemony Corn and Fruit Salad

Ingredients

LEMON CREAM

  1. 1 1/3 cups sugar
  2. 4 large eggs
  3. 3/4 cup fresh lemon juice
  4. Finely grated zest of 3 lemons
  5. 2 sticks plus 5 tablespoons (10 1/2 ounces) unsalted butter, cut into small pieces and softened
  6. 2 teaspoons unflavored gelatin
  7. 1/4 cup cold water
  8. 1 cup plain whole-milk yogurt
  9. 1 1/3 cups heavy cream

WHITE CHOCOLATE ROUNDS

  1. 9 ounces white chocolate, finely chopped

STRAWBERRY COULIS

  1. 1 pint strawberries, hulled
  2. 1/4 cup sugar
  3. 1/4 cup orange-passion fruit juice (optional)
  4. 1/4 cup guava nectar (optional)
  5. 3 tablespoons lemon juice
  6. Pinch of freshly ground pepper

SALAD AND GARNISH

  1. 1/2 medium pineapple--peeled, cored and cut into 1/4 -inch dice (2 cups)
  2. 2 medium Granny Smith apples--peeled, cored and cut into 1/4 -inch dice
  3. One 10-ounce package frozen corn kernels, thawed
  4. Red currants or whole strawberries, for garnish
