LEMON CREAM
- 1 1/3 cups sugar
- 4 large eggs
- 3/4 cup fresh lemon juice
- Finely grated zest of 3 lemons
- 2 sticks plus 5 tablespoons (10 1/2 ounces) unsalted butter, cut into small pieces and softened
- 2 teaspoons unflavored gelatin
- 1/4 cup cold water
- 1 cup plain whole-milk yogurt
- 1 1/3 cups heavy cream
WHITE CHOCOLATE ROUNDS
- 9 ounces white chocolate, finely chopped
STRAWBERRY COULIS
- 1 pint strawberries, hulled
- 1/4 cup sugar
- 1/4 cup orange-passion fruit juice (optional)
- 1/4 cup guava nectar (optional)
- 3 tablespoons lemon juice
- Pinch of freshly ground pepper
SALAD AND GARNISH
- 1/2 medium pineapple--peeled, cored and cut into 1/4 -inch dice (2 cups)
- 2 medium Granny Smith apples--peeled, cored and cut into 1/4 -inch dice
- One 10-ounce package frozen corn kernels, thawed
- Red currants or whole strawberries, for garnish
