- 2 teaspoons white vinegar
- 2 tablespoons granulated sugar
- 1 tablespoon turbinado or granulated brown sugar
- 1 tablespoon light brown sugar
- 1/4 teaspoon cinnamon
- 1 egg beaten with 1 tablespoon water
COMPOTE
- 1/3 cup light brown sugar
- Juice and strips of zest from 2 limes
- 3/4 cup fresh orange juice
- 2 1/4 pounds blueberries
MERINGUE
- 1/2 cup plus 1 tablespoon granulated sugar
- 3 tablespoons water
- 3 large egg whites
- 1/2 teaspoon cream of tartar
