Ingredients

PASTRY

  1. 9 tablespoons plus 2 teaspoons unsalted butter, at room temperature
  2. 3/4 cup sugar
  3. 3 large egg yolks
  4. 1 1/2 cups all-purpose flour
  5. 1/2 cup polenta or yellow cornmeal
  6. 3/4 teaspoon salt

FILLING

  1. 2 pounds flavorful apples, such as McIntosh, Empire, or Sierra Beauty
  2. 1 tablespoon sugar
  3. 1 teaspoon all-purpose flour
  4. 3 tablespoons polenta or cornmeal

GLAZE

  1. 1 egg yolk mixed with 1 tablespoon heavy cream
  2. 2 teaspoons coarse sugar crystals or Turbinado (raw) sugar
