Ingredients

  1. 8 chicken thighs, about 6 ounces each
  2. Salt and freshly ground pepper
  3. All-purpose flour
  4. 2 tablespoons unsalted butter
  5. 2 tablespoons extra-virgin olive oil
  6. 1 medium onion, chopped
  7. 4 ounces cremini mushrooms, quartered
  8. 1 1/2 cups Chardonnay
  9. 1 bay leaf
  10. 4 thyme sprigs
  11. 6 ounces frozen artichoke hearts, thawed and squeezed
  12. 1 1/2 cups chicken stock, preferably home made
  13. 2 tablespoons heavy cream
