Greek Style Artichoke & Chicken Stew Recipe

Ingredients

  • 6 chicken thighs (chicken breasts can be used as a substitute),
  • 1lb mushrooms cut into quarters,
  • 6 artichoke hearts cut into quarters,
  • 3 medium sized white onions chopped,
  • 3-4 garlic cloves minced,
  • 1 14oz can of crushed tomatoes,
  • 3 large celery sticks sliced,
  • 1/2 cup chopped parsley,
  • 3 cups chicken stock (I used Organics brand unsalted),
  • 1 tbls origano,
  • 1 tsp ground cinnamon,
  • 2 tbls coarsley ground coriander seeds,
  • 1/2 tsp sea salt,
  • 4 tbls olive oil,
  • 2 tbls corn starch
