- 3 thyme sprigs plus 1 tablespoon chopped thyme
- 2 garlic cloves
- 1 bay leaf
- 6 cups water
- 1/2 pound meaty slab bacon, cut into 1/2-inch dice
- 1/2 pound andouille sausages, halved lengthwise and sliced crosswise 1/2 inch thick
- 1 large onion, thinly sliced
- 1 cup dry white wine
- 1 1/2 cups drained sauerkraut, squeezed dry
- 3/4 teaspoon caraway seeds
- 4 tablespoons unsalted butter
- 3 cups Rich Turkey Stock or low-sodium chicken broth
- Salt and freshly ground pepper
- 4 large eggs, lightly beaten
