Choucroute Bread Pudding

Ingredients

  1. One 1 1/2-pound loaf sourdough bread or 2 baguettes, cut into 3/4-inch cubes (12 cups)
  2. 1 meaty ham hock (about 2 pounds)
  3. 3 thyme sprigs plus 1 tablespoon chopped thyme
  4. 2 garlic cloves
  5. 1 bay leaf
  6. 6 cups water
  7. 1/2 pound meaty slab bacon, cut into 1/2-inch dice
  8. 1/2 pound andouille sausages, halved lengthwise and sliced crosswise 1/2 inch thick
  9. 1 large onion, thinly sliced
  10. 1 cup dry white wine
  11. 1 1/2 cups drained sauerkraut, squeezed dry
  12. 3/4 teaspoon caraway seeds
  13. 4 tablespoons unsalted butter
  14. 3 cups Rich Turkey Stock or low-sodium chicken broth
  15. Salt and freshly ground pepper
  16. 4 large eggs, lightly beaten
