Ingredients

  1. 4 tablespoons unsalted butter
  2. 1 large shallot, minced
  3. 1 tablespoon dry vermouth
  4. 3/4 cup cream cheese (6 ounces), softened
  5. 1/4 cup crème fraîche or heavy cream
  6. 1/4 cup mayonnaise
  7. 2 tablespoons Dijon mustard
  8. 3 tablespoons minced chives
  9. 2 teaspoons finely chopped tarragon
  10. Salt and cayenne pepper
  11. 1 1/2 pounds jumbo lump crabmeat, picked over to remove any bits of shell
  12. 2/3 cup coarse dry bread crumbs
  13. Pita chips or toasted baguette slices
