Rustic Chicken Liver Mousse

Ingredients

  1. 1 pound chicken livers, trimmed
  2. 1/4 cup brandy
  3. 2 bay leaves
  4. 4 garlic cloves, 2 crushed, 2 thinly sliced
  5. 2 tablespoons extra-virgin olive oil
  6. 1 medium red onion, minced
  7. 4 ounces thinly sliced pancetta, coarsely chopped
  8. 1 anchovy, chopped
  9. 2 teaspoons tomato paste
  10. 3 tablespoons balsamic vinegar
  11. 1/2 cup sweet vermouth
  12. 1 cup heavy cream
  13. 1 teaspoon chopped thyme
  14. 1 teaspoon chopped sage
  15. Salt and freshly ground pepper
  16. Toasted baguette slices and Spiced Prune Chutney, for serving
