  6. 1 large red bell pepper, cut into 1/4-inch dice
  7. 3 garlic cloves, minced
  8. 1 pound ground pork
  9. One 1-pound eggplant, cut into 1/4-inch dice
  10. 1/2 cup fine dry bread crumbs
  11. 1/2 cup chopped Calamata olives (3 ounces)
  12. 1/2 cup chopped basil
  13. 1/2 cup freshly grated Parmesan cheese
  14. 1/4 cup chopped sun-dried tomatoes
  15. 2 teaspoons thyme
