Hefter's Artichoke and Goat Cheese Agnolotti with Truffles

Ingredients

ARTICHOKE FILLING

  1. 1/2 lemon
  2. 2 large artichokes
  3. 1/2 cup heavy cream
  4. 1 garlic clove, thinly sliced
  5. 1/4 cup mascarpone or softened cream cheese
  6. 1/4 cup fresh goat cheese (2 ounces)
  7. Salt and freshly ground white pepper

PASTA

  1. 1 cup plus 2 tablespoons all-purpose flour
  2. 1/4 cup semolina, plus more for dusting
  3. 1/2 teaspoon olive oil
  4. 1/2 teaspoon salt
  5. 2 large eggs

SAUCE

  1. 1 cup Chicken Stock
  2. 2 thyme sprigs
  3. 2 tablespoons unsalted butter
  4. Salt and freshly ground white pepper
  5. 1 tablespoon freshly grated Parmesan cheese
  6. 1 small black or white truffle, thinly shaved, or 1 teaspoon truffle oil (see Note)
