- 1/4 cup semolina, plus more for dusting
- 1/2 teaspoon olive oil
- 1/2 teaspoon salt
- 2 large eggs
SAUCE
- 1 cup Chicken Stock
- 2 thyme sprigs
- 2 tablespoons unsalted butter
- Salt and freshly ground white pepper
- 1 tablespoon freshly grated Parmesan cheese
- 1 small black or white truffle, thinly shaved, or 1 teaspoon truffle oil (see Note)
