  5. 2 tablespoons freshly grated Parmesan cheese
  6. 1 tablespoon finely chopped flat-leaf parsley
  7. 1 tablespoon snipped chives
  8. Salt and freshly ground white pepper
  9. 3 large egg yolks
  10. 4 large egg whites
  11. Boiling water
  12. 1 1/2 cups heavy cream
  13. 2 bunches watercress (1/4 pound), tough stems trimmed
  14. 2 plum tomatoes--peeled, seeded and finely diced
