Ingredients

  1. 1/3 cup each of all-purpose flour and cornstarch
  2. 1 teaspoon each of sea salt and crushed black peppercorns
  3. 1 teaspoon crushed Sichuan peppercorns (optional)
  4. Pinch of Chinese five-spice powder
  5. 6 ounces ice-cold seltzer
  6. 1 quart vegetable oil
  7. 1 pound cleaned squid, bodies cut into 1/2-inch-thick rings, tentacles halved
  8. Soy sauce, cilantro leaves and sliced hot chiles, for serving
