  • 1 pound dried apricots
  • 1/2 cup sugar, plus more for sprinkling
  • 2 teaspoons fresh lime juice
  • 1/2 teaspoon grated lime zest
  • Pinch salt
  • 1/2 cup shelled unsalted pistachio nuts, chopped
  • 1/2 cup caramelized pecans
  • 1/2 cup chopped red glazed cherries (available in supermarkets)
  • 5 large egg whites, at room temperature

  • For the Sauce:
    • 1 tablespoon cornstarch
    • 2 tablespoons water
    • 1 teaspoon finely chopped fresh mint leaves
    • About 3 cups cut-up fresh fruit (bite-size pieces)
