  • 1/2 lb plum tomatoes, seeded and cut into 1/4-inch dice (1 cup)
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 30 large sea scallops (2 1/2 lb total), tough muscle removed from side of each if necessary
