Ingredients

Hens

  • 1 orange
  • 4 Cornish game hens, about 1 1/2 pounds each (see Note)
  • 1 tablespoon light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper

Chutney

  • 1/3 cup cider vinegar
  • 1/4 cup packed light brown sugar
  • 1 tablespoon minced fresh ginger
  • 1/4 teaspoon ground cinnamon
  • 2 cups fresh rhubarb, trimmed and sliced into 1-inch pieces
  • 1/2 cup pitted dates, chopped
