Ingredients

  • 1 medium chicken, quartered (about 3 pounds)
  • 1/2 medium yellow onion, coarsely chopped
  • 5 garlic cloves, smashed
  • 1 tablespoon ground cumin
  • 2 1/4 teaspoons salt
  • 3/4 teaspoon ground black pepper
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 3 pinches of saffron
  • 2 cups long-grain white rice
  • 6 tablespoons unsalted butter
  • 1 medium yellow onion, thinly sliced lengthwise
  • 1/2 red bell pepper, cut into 1/4-inch-wide by 1-inch-long strips
  • 1/2 yellow bell pepper, cut into 1/4-inch-wide by 1-inch-long strips
  • 1/2 green bell pepper, cut into 1/4-inch-wide by 1-inch-long strips
  • 1/4 cup stuffed green olives, sliced
  • 1/4 cup capers, drained
  • 2 tablespoons soy sauce
  • 1/4 cup finely chopped green onions, for garnish
  • 1/4 cup finely chopped fresh cilantro, for garnish
