Ingredients

  • Brine:
  • 5 cups water
  • 1 cup sake
  • 1/2 cup sugar
  • 1/2 cup Kosher salt
  • 2 tablespoons minced ginger
  • 1 tablespoon toasted whole Szechwan peppercorns
  • 1 side skinless salmon fillet, pin bones removed, 5 to 6 pounds
  • Remoulade:
  • 6 tablespoons pommery mustard
  • 2 tablespoons wasabi paste
  • 1 tablespoon chopped garlic
  • 1/3 cup rice wine vinegar
  • 2/3 cup canola oil
  • 1/3 cup chopped cucumbers, peeled and de-seeded
  • 1/3 cup chopped scallions, green parts only
  • 2 tablespoons chopped cilantro
  • Salt and pepper, to taste
  • Smoking Mix:
  • 2 cups sugar
  • 2 cups long grain rice
  • 2 cups jasmine tea
  • Garnish:
  • 1 medium cucumber, peeled, and thinly sliced
