- 2 Kaffir lime leaves, or 1 tablespoon finely grated lime zest
- 1/4 cup chopped fresh lemon grass
- 1 tablespoon rice wine vinegar
- 1 tablespoon sugar
- 1 teaspoon whole black peppercorns
- 1/2 teaspoon salt
- 1 tablespoon chopped shallots
