Method

1. Preheat the oven to 210ºC
2. For the filling, mix all ingredients (except ice cream) in a bowl and set aside to marinate with the brandy.
3. For the sponge, combine the eggs and the caster sugar in the bowl of your electric mixer and whisk until light and fluffy.
4. Sift together flour, cocoa powder and salt and gently fold under light egg mixture.
5. Lastly fold in the melted butter.
6. Grease two 30x20 cm rectangular cake tins and line with baking paper.
7. Pour batter into tins, smooth with palate knife and bake for 10 minutes or until just firm.
8. Remove sponge from the tin and place on wire rack to cool.

Builing the ice-cream sandwich
1. Take ice cream out of the freezer and allow to soften slightly.
2. Line a deep baking tin 30x20cm with baking paper and place one sheet of sponge on the base.
3. Evenly spread out the fruit mixture over the sponge base and top with softened ice cream.
4. Top with the second sheet of sponge and return to the freezer.
5. Once firm again, cut into portions and return to freezer.
6. Combine ingredients for the glaze in a bowl and gently melt over a double boiler. 7. Dip one corner of each sandwich portion into the glaze, sprinkle with *Quatre Epices (or mixed spice) and return to freezer until required.

Maitre Tip:

*When the ice cream is soft, I sometimes mix in a little Gingerbread spice and some chocolate shortbread pieces.
**Quatre Épices is a spice mix available from good delicatessens.
