Pineapple Rum Turkey Kabobs

Ingredients

12 oz turkey breast tenderloin, raw (or boneless turkey breast)
0.33 cup pineapple juice , unsweetened
3 tbsp rum
1 tbsp brown sugar
1 tbsp fresh lemongrass , finely chopped (or 2 teaspoon finely shredded lemon peel)
1 tbsp olive oil
1 red onion , cut into thin wedges
3 plums , pitted and cut into thick slices (or 2 Nectarines)
2 cup canned pineapple chunks in water (or fresh)
1 cup cooked long grain brown rice , hot (optional)
