Basted Eggs Over Sausage And Peppers

Ingredients

  • 1 teaspoon Butter
  • 1 teaspoon Olive Oil
  • 1 small Yellow Onion, diced
  • 2 cloves Garlic, minced
  • 34 cup Fresh Button Mushrooms, sliced
  • 2 links Chicken-apple Sausage, diced (like Aidell's)
  • 1 medium Red Bell Pepper, diced
  • Salt and Pepper, to taste
  • Cayenne Pepper, to taste
  • 12 cup Grated Cheddar Cheese
  • 4 Eggs
  • 1 tablespoon Fresh Chives, or green onion, chopped, for garnish
  • 13 cup Tomatoes, diced, for garnish
