- 2 cloves Garlic, minced
- 3⁄4 cup Fresh Button Mushrooms, sliced
- 2 links Chicken-apple Sausage, diced (like Aidell's)
- 1 medium Red Bell Pepper, diced
- Salt and Pepper, to taste
- Cayenne Pepper, to taste
- 1⁄2 cup Grated Cheddar Cheese
- 4 Eggs
- 1 tablespoon Fresh Chives, or green onion, chopped, for garnish
- 1⁄3 cup Tomatoes, diced, for garnish
