  • 34 cup Extra Virgin Olive Oil
  • 12 tablespoon Sea Salt
  • 1 pinch Freshly Ground Black Pepper
  • 6 cups Water
  • 14 Sugar
  • 3 tablespoons Kosher Salt, plus more for seasoning
  • 2 Fresh Bay Leaves
  • 1 tablespoon Whole Black Peppercorns
  • 1 tablespoon Whole Clove
  • 3 cloves Garlic, peeled and thinly sliced
  • 1 34 pounds Pork Loin, cut into 1 1/2" cubes
  • 16 Jalapeno Peppers, sliced lengthwise and seeded
  • 12 large Mexican Papaya, quite firm and not too ripe, peeled and seeded and cut into 2 inch chunks
