- 2 Fresh Bay Leaves
- 1 tablespoon Whole Black Peppercorns
- 1 tablespoon Whole Clove
- 3 cloves Garlic, peeled and thinly sliced
- 1 3⁄4 pounds Pork Loin, cut into 1 1/2" cubes
- 16 Jalapeno Peppers, sliced lengthwise and seeded
- 1⁄2 large Mexican Papaya, quite firm and not too ripe, peeled and seeded and cut into 2 inch chunks
