- 1 pound Grape Tomato, halved
- 8 whole Garlic Clove
- 1 1⁄2 pounds Chicken Sausage, spicy (andouille or italian)
- 1 1⁄2 pounds Chicken Breast, sliced
- 1⁄2 ounce Fresh Sage, chopped
- 1 teaspoon Sweet Paprika
- 1 teaspoon Ground Red Pepper, use spicy fresh ground peppercorns if available. can substitute 1/2 teaspoon of red pepper flakes.
- 1⁄2 cup Flour
- 1 stick Unsalted Butter
- 2 large Bell Pepper, red and yellow, chopped
- 1 medium Yellow Onion, chopped
- 1 head Celery, chopped
- 1⁄4 cup Dry White Wine
- 1 tablespoon Smoked Paprika, (pimenton)
- 3 whole Dried Whole Bay Leaf
- 1 teaspoon Hickory Smoked Salt
- 1 tablespoon Ground Cinnamon
- 2 teaspoons Ground Black Pepper
- 3 tablespoons Cajun Hot Sauce, use your favorite and add to taste. a mix with something like stone double bastard hot sauce is always a hit.
- 4 cups Fish Stock, heated (best if made with reduction in hot water)
- 1 cup Quinoa, rinsed
