Chicken Sausage Gumbo With Quinoa

Ingredients

  • 1 pound Grape Tomato, halved
  • 8 whole Garlic Clove
  • 1 12 pounds Chicken Sausage, spicy (andouille or italian)
  • 1 12 pounds Chicken Breast, sliced
  • 12 ounce Fresh Sage, chopped
  • 1 teaspoon Sweet Paprika
  • 1 teaspoon Ground Red Pepper, use spicy fresh ground peppercorns if available. can substitute 1/2 teaspoon of red pepper flakes.
  • 12 cup Flour
  • 1 stick Unsalted Butter
  • 2 large Bell Pepper, red and yellow, chopped
  • 1 medium Yellow Onion, chopped
  • 1 head Celery, chopped
  • 14 cup Dry White Wine
  • 1 tablespoon Smoked Paprika, (pimenton)
  • 3 whole Dried Whole Bay Leaf
  • 1 teaspoon Hickory Smoked Salt
  • 1 tablespoon Ground Cinnamon
  • 2 teaspoons Ground Black Pepper
  • 3 tablespoons Cajun Hot Sauce, use your favorite and add to taste. a mix with something like stone double bastard hot sauce is always a hit.
  • 4 cups Fish Stock, heated (best if made with reduction in hot water)
  • 1 cup Quinoa, rinsed
