Quick Chicken Chili

Ingredients

  • 1 pound Boneless Skinless Chicken Breast, or tenderloins, or 1 lb ground white meat chicken or turkey
  • Cooking Spray
  • 1 medium Onion, finely chopped
  • 1 teaspoon Garlic, minced (or 3 cloves)
  • 12 teaspoon Chili Powder, optional
  • 1 medium Jalapeno Pepper, chopped (optional if you like spicy chili)
  • 2 cans No Salt Added Beans, or low sodium beans, drained and rinsed (mix or match pinto, red, kidney or navy), 15.5 oz cans
  • 1 medium Bell Pepper, chopped (any color)
  • 2 cups Fat-Free Low Sodium Chicken Broth, or 1 - 16 oz can
  • 12 teaspoon Pepper
  • 1 teaspoon Cumin
  • Fresh Cilantro, chopped (optional)
  • 12 cup Low-Fat Sour Cream, or fat-free (optional)
