Southwestern Chicken Chowder

Ingredients

  • 1/2 cup  butter
  • 1 1/2 pounds  boneless, skinless chicken breasts, cut into 1/2-inch pieces
  • 1 cup  chopped onion
  • 1 cup  chopped red bell pepper
  • 1 cup  chopped celery
  • 2 cloves  garlic, minced
  • 2 teaspoons  ground cumin
  • 2 teaspoons  chili powder
  • 1 teaspoon  salt
  • 1/8 teaspoon  ground red pepper
  • 6 tablespoons  all-purpose flour
  • 3   (14.5-ounce) cans chicken broth
  • 1/2   (32-ounce) package frozen Southern-style hash browns
  • 1   (16-ounce) package frozen whole-kernel corn
  • 1   (15.5-ounce) can black beans, drained and rinsed
  • 2 cups  half-and-half
  •   Garnish: shredded cheese, sour cream, and chopped green onion

Description

Melt Butter In A Large Dutch Oven Over Medium-high Heat On Stovetop. Add Chicken And Cook Until Browned, Stirring Occasionally.
