Healthier Zucchini Bread (gf)

Ingredients

  • 12 cup Granulated Cane Sugar
  • 12 cup Shortening, butter, or non-dairy alternative
  • 2 large Eggs
  • 12 cup Sour Cream, dairy or non-dairy
  • 1 teaspoon Vanilla Extract, *use GF as necessary
  • 12 cup Banana, ripe, mashed (approximately 1 banana)
  • 2 cups Gluten-Free All Purpose Flour, Jules brand
  • 2 tablespoons Flax Seed Meal, (optional, but recommended)
  • 1 tablespoon Baking Powder, **use GF as necessary
  • 1 teaspoon Baking Soda
  • 12 Sea Salt, fine
  • 1 tablespoon Cinnamon, or pumpkin pie spice
  • 1 cup Zucchini, grated, packed (approximately 1 zucchini squash)
  • 12 cup Chopped Pecans, or walnuts (optional)
  • Cinnamon Sugar, to sprinkle on top
