  • 12 pound Green Beans, trimmed and cut into 1 1/2" pieces
  • 2 Roasted Chicken, hindquarters or breasts, cut into 1" pieces
  • Freshly Ground Pepper, to taste
  • 3 tablespoons Unsalted Butter, at room temperature
  • 1 Egg, at room temperature
  • 12 cup Ricotta Cheese
  • 12 cup Gluten-Free Flour
  • 12 teaspoon Kosher Salt
  • pinch Ground Nutmeg
  • 14 cup Parmesan Cheese, grated
  • 12 cup Fresh Parsley, chopped
