  • 1 12 tablespoons Dried Currants
  • 1 23 cups Water
  • 1 cup Frozen Chopped Spinach, thawed
  • 1 Lemon, zested and juiced
  • 14 cup Walnuts, toasted and chopped
  • 2 tablespoons Fresh Parsley, chopped
  • Salt and Pepper, to taste
  • 2 tablespoons Extra Virgin Olive Oil, for drizzling
  • 3 ounces Feta Cheese, or goat cheese
