Moqueca - Brazilian Fish Stew

Ingredients

  • 2 pounds White Fish Fillets, firm, such as halibut, swordfish, or cod, rinsed in cold water, pin bones removed, cut into large portions
  • 3 cloves Garlic, minced
  • 4 tablespoons Lime Juice, or lemon juice
  • 1 34 cups Boiling Water, (check your rice package for the appropriate ratio of liquid to rice for the type of rice you are using)
  • 1 tablespoon Olive Oil
  • 12 Onion, chopped
  • 1 clove Garlic, minced
  • 1 cup White Rice
  • 1 teaspoon Salt
  • Olive Oil
  • 1 cup Spring Onion, chopped, or 1 medium yellow onion, chopped or sliced
  • 12 Bell Pepper, yellow or red, seeded de-stemmed, chopped (or sliced)
  • 1 tablespoon Paprika, (Hungarian sweet)
  • pinch Red Pepper Flakes
  • Salt
  • Freshly Ground Black Pepper
  • 2 cups Tomatoes, chopped (or sliced)
  • 14 cup green onion greens, chopped
  • 1 bunch Fresh Cilantro, (large) chopped with some set aside for garnish
  • 1 can Coconut Milk, (14 oz)
  • 1 tablespoon Palm Oil, if you can find it

Description

I Tend To Shy Away From Cooking Fish At Home. I Think It's Mostly Because Buying Fish At The Store While A Student Was Never Something I Did And As A Result Is Unfamiliar Territory. I've Baked A Fillet Or Two In The Oven, Helped Make Easy Fish Meals At
