- 1 1⁄2 cups Chicken Breast, Cooked, shredded or cut into strips
- 6 Flour Tortillas, Cut into bite size pieces, appx 1/4 inch by 2 inches. Can use corn tortilla as well
- 1⁄4 cup Grapeseed Oil, or any high-smoke oil
- 1 Onion, small, chopped, appx 1/2 cup
- 2 cloves Garlic, finely chopped
- 1 Anaheim Pepper, medium, or other pepper, sliced or diced (depending on your preference).
- 4 cups Chicken Broth
- 14 1⁄2 ounces Diced Tomatoes, undrained, fire roasted gives more flavor to soup
- 1⁄2 teaspoon Coarse Salt, Sea Salt or Kosher
- 1 Avocado, medium, ripe
- 1 Lime, cut into wedges
- 1⁄2 cup Shredded Cheese, Mexican blend, monterey jack, etc
- 1⁄4 cup Fresh Cilantro, chopped
