Tuscan Pork Cutlet Sandwiches

Ingredients

1 qt. KRAFT MAYO Real Mayonnaise
1 cup sun-dried tomatoes, coarsely ground
1 cup fresh fresh basil, chiffonade
1/2 cup kalamata olives, finely chopped
1/2 cup capers, drained
1/4 cup Italian parsley, chopped
2-1/2 Tbsp. lemon zest, grated
To taste salt and black pepper
Breaded Pork Cutlets
4 each trimmed boneless pork loin roasts, each cut into 8 slices (about 1/2 inch thick)
4 each eggs, beaten
2 qt. RITZ Crushed Crackers
1 cup Italian parsley, chopped
To taste salt and black pepper
1 cup olive oil
Sandwiches
32 each kalamata olive ciabatta bread, cut into 4-1/2x3-1/2-inch pieces, horizontally split and toasted
2 qt. fresh spinach, sauteed, seasoned
1 qt. red onions, chopped, sauteed
8 each yellow peppers, roasted, quartered lengthwise
32 slices provolone cheese, cut into 1-oz. slices
