Alaska Halibut Chowder

Ingredients

2 lbs of Diced bacon

5 lbs. or 6 cups of Chopped onions

192 oz. or 1 1/2 gallons of Fish stock

5 lbs. or 3 qt. of Diced potatoes

2 lbs. or 1 qt. of Diced celery

6 lbs. Alaska Halibut, thawed if necessary, and cut in 1-inch cubes

4 oz. or 1 cup of Flour

1 tsp. of Sugar

10 oz. or 1 1/4 cups of Water

1/2 gallon of Light cream or Half and Half

2 tsp. of Salt

1 tsp. of Ground white pepper

As needed Chopped chives or parsley
