Miso-Marinated Alaska Salmon with Citrus and Shiitakes

Ingredients

3 ea. Whole Alaska Salmon sides, with skin, bones removed

3 cups White miso paste

6 Tbsp. Sake or sherry

1 cup Olive oil

1 1/2 lb. Fresh shiitake mushrooms, stemmed, caps thinly sliced

5 ea. Naval oranges, zest removed and saved

5 ea. Large lemons, zest removed and saved

1 1/2 cups Fresh cilantro leaves

3/4 cup Fresh chives, cut 1/2 inch lengths

3/4 cup Fresh orange juice

4 Tbsp. Fresh lemon juice

As needed Salt and pepper
