4 qt. or 5 lbs., Zucchini, halved and sliced 1-inch thick

9 cups or 3 lb., Onions, coarsely chopped

6 cups or 2 lb., Red bell peppers, seeded and cut into 1-inch cubes

6 cups or 2 lb., Green bell peppers, seeded and cut into 1-inch cubes

1/4 cup or 1/4 oz., Dry Italian herb seasonings

2 Tbsp. Garlic, minced

1 (#10) can Canned whole tomatoes in juice

9 lb. Alaska Halibut, thawed if necessary, and cut in 1-inch cubes

1 cup or 4 oz., California Ripe Olives, sliced

To taste Ground black pepper

2 cups or 16 oz., White wine
