Ingredients
1/2 lb ground pork sausage 1/2 cup chopped green pepper 1/2 cup chopped onion 1 clove garlic, minced 1 15oz. can diced tomatos 1 can black-eyed peas, undrained 1 tsp Italian Seasoning (the herb blend) 1/4 tsp. black pepper 3 cups hot cooked rice shredded sharp cheddar cheese reduced-fat sour cream Brown sausage in a large skillet, crumbling while it cooks. Drain. Return sausage to skillet, add onion and green pepper, cook until veggies are soft (about 5-6 minutes). Add garlic, cook 1 minute. Add can of tomatoes and can of beans. Stir in italian seasoning and pepper. Cover, reduce heat and simmer for 25 minutes. Serve over hot cooked rice, sprinkle with cheese and add a dollop of sour creamDescription
