Ingredients

Salmon Ingredients:
4 x 180g salmon fillet, boned
2 tbsp olive oil
400g green peas
1 tbsp chopped parsley
3–4 tbsp chopped mint
1 tbsp avocado oil
2 tbsp lemon Juice
2 avocados, halved, peeled and chopped
Sea salt and pepper to taste

Avocado Chimichurri Ingredients:
1 bunch coriander
½ cup rice or white wine vinegar
1 bunch flat leaf parsley, no stems
1 tbsp (2–3 cloves) garlic, chopped
1 tbsp oregano, fresh
¼ cup lime juice
1 jalapeno chilli, roasted, deseeded
2 avocados, diced
Salt and pepper to taste
1/3 cup water
¼ cup olive oil
