Warm Soba With Pork, Shrimp And Cabbage

Ingredients

1/4 cup  plus 2 tablespoons low-sodium soy sauce 2 teaspoons  dashi powder see Note 12 ounces  dried soba noodles 1 tablespoon  canola oil 4 ounces  lean ground pork stems discarded and caps thinly sliced 4 ounces  shiitake mushrooms 1/2 pound  shelled and deveined medium shrimp 1/2   medium head napa cabbage thinly sliced 2   scallions thinly sliced Tip: Dashi is a clear Japanese stock often made with dried bonito (tuna) flakes and water. It's available in powdered form at Asian markets. In place of the dashi and water called for above, you can use 3 cups of low-sodium chicken broth mixed with 3 cups of water.
