3 tablespoons olive oil
2 cloves garlic, minced
5 cups mixed spring greens, rinsed and dried
1 cup diced peeled and seeded cucumber
1 cup diced peeled and seeded plum tomatoes
1/2 cup finely diced red onion
1/2 cup coarsely chopped green pepper
1 tablespoon fresh basil, finely chopped
1/4 cup fresh parsley, coarsely chopped
1 stalk celery, finely chopped
1 tablespoon fresh lemon juice
2/3 cup Red Wine Vinaigrette
Freshly ground pepper
