Ingredients

Ingredients (for the latkes):
1 pound potatoes
1/2 c. finely chopped onion
1 large egg, lightly beaten
1/2 teaspoon salt
1/2 to 3/4 c. olive oil

Ingredients (for crab topping):
1 16-oz. can, good quality crabmeat
3 tbsp mayonnaise
Seasoning (Some prefer Old Bay; I prefer a little salt, paprika, and a dash of cayenne)

Ingredients (Hollandaise):
3 egg yolks
salt and pepper
1-2 tbsp lemon juice
2 sticks unsalted butter
