- 1/2 cup Kalamata olives
- 2 tbs extra virgin olive oil
- 3 tsp red wine vinegar
- 2 x 180g pkts haloumi
- 1/3 cup fresh mint leaves, torn
- 1/4 cup finely chopped continental parsley
- 2-3 lemon wedges, to serve
