Lemon And Oregano Lamb Skewers With Greek Salad

Ingredients

  • You will need to soak 8 bamboo skewers in cold water for 10 mins for this recipe.
  • 4 (about 400g) lamb eye of loin (backstrap), cut into 2cm cubes
  • 2 tbs olive oil
  • 1 tbs fresh lemon juice
  • 2 tsp finely shredded lemon rind
  • 2 tbs finely chopped drained capers
  • 2 tsp dried oregano
  • Salt & freshly ground black pepper
  • 1 red capsicum, halved, deseeded, cut into 2cm cubes
  • 1 green capsicum, halved, deseeded, cut into 2cm cubes
  • 2 Lebanese cucumbers, halved, deseeded, cut into 1 cm cubes
  • 1 red onion, halved, thinly sliced
  • 80g (1/2 cup) drained pitted kalamata olives
  • 40g baby rocket leaves
  • 1/4 cup loosely packed coarsely chopped fresh continental parsley
  • 200g feta, crumbled
  • 1 tbs balsamic vinegar
