Ingredients
- You will need to soak 8 bamboo skewers in cold water for 10 mins for this recipe.
- 4 (about 400g) lamb eye of loin (backstrap), cut into 2cm cubes
- 2 tbs olive oil
- 1 tbs fresh lemon juice
- 2 tsp finely shredded lemon rind
- 2 tbs finely chopped drained capers
- 2 tsp dried oregano
- Salt & freshly ground black pepper
- 1 red capsicum, halved, deseeded, cut into 2cm cubes
- 1 green capsicum, halved, deseeded, cut into 2cm cubes
- 2 Lebanese cucumbers, halved, deseeded, cut into 1 cm cubes
- 1 red onion, halved, thinly sliced
- 80g (1/2 cup) drained pitted kalamata olives
- 40g baby rocket leaves
- 1/4 cup loosely packed coarsely chopped fresh continental parsley
- 200g feta, crumbled
- 1 tbs balsamic vinegar
