  • 2 Hans Bacon Hocks
  • 2 tbsps olive oil
  • 20g butter
  • 1 onion, stick celery, carrot and parsnip finely chopped
  • 1 tbsp chopped parsley
  • 500g green dried split peas rinsed and drained
  • 2 bay leaves
  • 1 litre water
  • 1 litre stock
  • 1-2 thyme leaves
  • 1 tbsp chopped parsley for serving
