  • 1½ pounds [675 g] boneless chicken thighs
  • ⅔ cup [160 mL] coconut milk
  • ⅔ cup [160 mL] lemon juice
  • 4 scallions, minced
  • ½ cup [120 mL] coconut meat, grated or shredded
  • 6 Thai chiles, roasted and very finely minced
  • Salt and pepper to taste
