Braised Pork Ribs in Roasted Chile‐Tomato Sauce

Ingredients

  • 3 quarts [3 L] water
  • 1 large onion, unpeeled, quartered
  • 2 heads of garlic, halved
  • 4 stalks celery with leaves
  • 3 dried chiles de arbol or dried cayenne chiles
  • 3 bay leaves
  • 3 allspice berries
  • ½ teaspoon [3 mL] black peppercorns, bruised
  • 1 tablespoon [15 mL] salt
  • 3 pounds [1.4 kg] baby back pork ribs, cut into individual riblets
  • 8 large ripe tomatoes, fire roasted
  • 10 jalapeño chiles, fire roasted
  • 6 scallions, fire roasted
  • 8 garlic cloves, fire roasted
  • 1 teaspoon [5 mL] sugar
  • ¼ cup [60 mL] vegetable oil or lard
  • 1 cup [240 mL] cilantro leaves
  • Salt and pepper to taste
  • 16 homemade corn tortillas
