  • ½ cup water
  • 2 teaspoons Dijon mustard
  • 1½ cups shredded escarole
  • 1½ cups shredded Boston lettuce
  • 1 cup shredded arugula
  • 4 cups cubed cooked chicken breasts
  • 2 small ripe avocados, peeled, seeded, and cubed
  • 2 large hard-boiled eggs, shelled and cut into large dice
  • 1 teaspoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
