Salt Cod and Clam Stew

Ingredients

  • 1/2 pound salt cod
  • 2 cups dried white beans (such as Great Northern or cannellini beans)
  • 1 tablespoon kosher salt
  • 1 quart whole milk
  • 1 tablespoon whole black peppercorns
  • 2 bay leaves
  • 1 tablespoon unsalted butter
  • 2 teaspoons minced garlic (about 2 medium cloves)
  • 1/2 cup diced carrot (about 1 large carrot)
  • 1 1/2 cups chopped leeks, white and light green parts only
  • 1 tablespoon chopped fresh thyme
  • 1 pound Manila clams, scrubbed
  • 1 1/2 cups dry white wine
  • 1/2 teaspoon grated lemon zest
  • 3 tablespoons finely chopped fresh Italian parsley
  • Extra-virgin olive oil, for drizzling
