Asparagus And Shallot Frittata

Ingredients

  • 2 Tbsp Extra Virgin Olive Oil
  • 3 med Shallot , peeled and diced small
  • 1/4 tsp Minced Garlic , fresh
  • 1 lb Asparagus , Fresh, Remove Fibrous Ends And Discard. Cut Remaining Stem On Diagonal, About 1 Inch Pieces
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 5 ea Egg large , beaten
  • 2 Tbsp Parmesan , freshly grated
  • 8 oz Swiss Cheese , (Gruyere is best), grated
  • 1 Tbsp Parsley Italian Fresh , stems removed, leaves chopped (if you can find Chervil use it instead)
