Eggplant Parmesan

Ingredients

3 to 4 cups of your favorite marinara sauce
2 medium eggplants, peeled and sliced lengthwise in 1/4" slices
1 cup of flour put into a gallon size plastic bag
4 eggs
1 1/2 cups milk
2 1/2 cups bread crumbs: add 1 TBS Italian seasoning, 1/2 tsp salt, 1 tsp pepper, 1 TBS chopped parsley
1/2 cup butter
1/2 cup olive oil
2 cups freshly grated Mozzarella cheese
1 cup grated parmesan cheese
