Fillet of beef wrapped in herbs with Brussels sprouts and pommes parmentier

Ingredients

  • 1 whole beef fillet, trimmed
  • 1 clove garlic, cut into slivers
  • 1 pinches black pepper
  • 2 tbsp olive oil
  • 1 red onions, chopped
  • 60 g button mushrooms, chopped
  • 1 carrots, finely chopped
  • 60 g butter
  • 1 tbsp Dijon mustard
  • 1 tbsp creamed horseradish
  • 1 handfuls mixed herbs, chopped
  • 225 g smoked back bacon
  • 350 ml red wine
  • 300 ml beef stock, or veal stock
Pommes Parmentier

  • 4 tbsp olive oil
  • 4 large Maris Piper potatoes, cut into small cubes
  • 1 clove garlic, chopped
  • 2 smoked bacon, chopped
  • 1 pinches black pepper
Brussels sprouts

  • 450 g brussels sprouts
  • 1 butter, knob
  • 1 pinches salt and black pepper
  • 1 tbsp balsamic vinegar
